Chicken Fried Rice


A few weeks ago, my friend and I were in desperate need for some comfort food. I looooooove some good comfort food. We both had a really rough week at work and needed a distraction from the job that literally takes up our entire lives. Chicken Fried Rice is the perfect meal for this. I make it whenever I’ve had a rough day, or I’m in the mood to cuddle up and watch a movie. This recipe makes enough for four people, so dinner for the family is covered for tonight!

2 Cups of Rice (I use instant rice, because less work=better work. Am I right?)

1 Bag of Frozen Corn, Green Bean, and Carrot Medley (less than $1 at your local grocery store)

3 Chicken Breasts

4 Teaspoons of Minced Garlic

1 Tablespoon of Sesame Oil

1 Tablespoon of Vegetable Oil

2 Tablespoon of Soy Sauce

1 Green Onion


Step 1:

Cut chicken breasts into small bites. Place in pan with sesame oil and vegetable oil. Cook until chicken is no longer pink on outside. Cook rice separately.


Step 2:

Add soy sauce, garlic, and whites of green onions to pan. Toss until garlic is fragrant.


Step 3:

Add frozen vegetables to pan with chicken (don’t worry about thawing the veggies!). Once veggies are soft, add rice to pan. Mix all together in pan.


Step 4:

Plate and enjoy!! Salt, pepper, and add some soy sauce to taste J
